Vegetarian Pho in Fresno

Pho Hung at Olive and First, which is currently my favorite pho restaurant in Fresno, serves vegetarian pho. I've been with two vegetarian friends on separate occassions, and we all felt that it is indeed a vegetable-based broth as the restaurant claims. They fill the bowl with celery, cabbage, broccoli, and onions along with the rice noodles and probably a couple other veggies I'm not remembering. The broth is similar to their beef broth in that it's swimming with deeply sauteed garlic, but it's obviously not from the same stock.

As well if you're a fan of beef pho, I highly recommend giving the place a shot. Their rare steak and meat balls are different than other restaurants I've tried up and down the West Coast, and their broth is a garlic lover's dream. They include smaller, whole red and green peppers (unsure what they are) rather than the standard sliced jalepenos, and sometimes they include segments of long string beans.

The atmosphere is cool as well. The building is circular and has red vinyl booths around the inside walls.

Pho

Pho originated in Viatnam, and is a viatnamese dish. Pho (pronounced fuh) is a rice noodle soup with a beef, chicken, sea food, and vegetarian based broth. It comes with other amenities like bean sprouts, fried garlic, green onions, etc. You then have an assorted group of flavouring sauces that you can flavour the soup based upon your own desire. I personally like mine kind of spicey. It is not just a meal for the winter, you can eat it in the summer as well. If this is not what you like, try some of the other dishes, the home style stir fry beats out Panda Express any day of the week.

There are starting to be more of them around town. I hear there is on on Bullard and Maroa, this is an more upscale (as in modern in comparison to mom and pop shops) restaurant well at least that is what I hear. I think the mom and pop shops are better though, they are more authentic. Another new one is Golden Dragon on Peach and Kings Canyon this one is cleaner and nicely organized because it is new.

I also recently discovered one in Clovis. Pho 2006, it is on Clovis ave between Barstow and Shaw. It is in a small shopping area so you will have to look for the Sign.
